Maranhao is another wonderful natural Brazilian coffee, which shows the usual characteristics of its origin in abundance - full body, sweet and smooth flavour - with the yellow catuai variety adding more sweetness and acidity. Being yellow in colour, as the name suggests, yellow catuai absorbs less sunlight than the red fruiting varietal leading to a slower maturation and a more complex cup. 

Maranhao is an extended fermentation process, meaning the coffee cherries sit in the fermentation tanks for slightly longer, 72 hours in this case, leading to deeper and more complex flavours. There is a high risk to this method, and entire crops can be lost if mismanaged, which is a credit to the highly skilled work the Betti Family do at Sitio Maranhao. The reward is worth the risk in this case, resulting in a super unique, fruity and juicy flavour profile.
