Orlando Aguilar, like many farmers in his region, comes from a long line of coffee farmers.
He applies specialist knowledge and processes to his farming methods, picking only ripe cherries which results in higher quality and that much desired El Salvador ripe and fruity sweetness. Sitting in their mucilage under the El Salvador sunshine for up to 25 days, these Pacas beans absorb all the sticky goodness from the sweet pectin layer beneath their cherry.
The soil of El Salvador, known as 'land of volcanoes,' is nutrient rich, whilst the lower, cooler valley regions of Chalatenango means slower cherry maturation which results in big flavou and high Bourbon-derived sweetness. Think creamy rice pudding, topped with fruit soaked in sugar and a syrupy citrus dollop on top.
